Join us for a single evening as four English sparkling wines from Roebuck Estates meet dim sum folded by hand that morning. The night starts early — an espresso martini as the light fades — before we move through the pairing, glass by glass.

The Welcome
The night is still young. We open with an espresso martini to set the tone before the sparkling begins.

The Sparkling
Four sparkling wines from Roebuck Estates — a house that declares a vintage every single year, where almost no one else does. Each glass is one whole growing season in a bottle. We're pouring all four, side by side.

The Dim Sum
A dedicated selection to meet the sparkling, folded by hand that morning: spring rolls, duck skewers, chicken gyoza, and our house speciality sauces.
